Airship Coffee has four rooms in Bentonville, and no two of them agree on what a cafe should look like. The one at Coler is an open-air bar in the woods of the mountain-bike preserve; you cannot drive to it. You park at a Coler lot and walk or ride the greenway, just under a mile, to the counter. The Pumphouse keeps shop in the city's oldest residential neighborhood, in a 1954 building that once pumped Ford Springs water to the whole town and kept its waterworks when Airship restored it. The Porch, on the Walmart campus, was built with more seats outside than in. And 5th Street, the original, is still the roastery, so the beans for the other three are roasted in the room you're drinking in. Airship builds each room to the ground it sits on rather than to a house plan, and puts the counter where people are already going. If you only get to one, make it Coler. The walk in is part of it.
