Three counter-facing stages where the kitchen is the act and the ticket buys you a seat to watch your meal get cooked. One stage runs a permanent Ippudo; the show stage rotates visiting chefs who bring their own menu for a residency and clear out when the run ends. It's built into the old Pressroom beside Onyx Coffee Lab, whose bar splits coffee to the west, matcha and tea to the east. Book the residency you'd otherwise never sit down to — and check who's cooking first, because that's the whole draw.
