Eleven seats stretch in front of the chef station, and the omakase — "I leave it up to you" — is built in front of you, course by course, off the Motto by Hilton lobby on the downtown square. The menu is Masa Hamaya's, a James Beard Award winner who ran the sushi counter at Uchiko in Austin and cooked at the Michelin-starred Ame in San Francisco. NWA has sushi restaurants; it did not have this. Book the counter, not a table.
