The rule is no gluten in the building — not an accommodation, the premise. It arrived with Conifer in 2022, born of Matthew Cooper’s own celiac disease, and it has held in every room he has opened since. The longer arc is the climb upstream: in roughly eight years he has built three Bentonville kitchens, each sitting closer to the source than the last. The Preacher’s Son first, the founding room, run for its owners. Then Conifer, his own restaurant, rewritten each season around local farms — “taking the best products grown around here and highlighting them in their natural forms,” in his words. Then Ryn, opened in June 2025 on the farm that grows what it serves: Sun Painted Farm, the farmstead he established with his partner to supply it. The name is “Remember Your Name,” his grandmother’s mantra. The James Beard Foundation has put him on its Best Chef: South list three years running, finalist in 2025, and Southern Living ranked Conifer No. 2 among the South’s best new restaurants. The style belongs to one man and moves when he does. For now it sits in two rooms: Conifer and Ryn.
