Walk in and the mouth of the kitchen is dead ahead, the deli counter to the left, the dining room to the right, and a row of bar seats looking straight onto the line. Everything faces the cooking, because the cooking is the point. Pizza Lottie's is chef Mike Robertshaw's second kitchen, opened in June 2026 inside Bentonville's Crystal Flats complex. He built Pizzeria Ruby in Johnson, and the register he carries over is Northeastern rather than generically Italian — eighteen-inch pies, pastas made from scratch, outsized meatballs, seasonal seafood like fried whole-belly clams. Meredith Butler, Ruby's co-founder, told the Bentonville Bulletin, "Think East Coast comfort, a little attitude and a few secrets we're keeping tucked in the back pocket for now." The pies carry names: the Pistachio Bologna, built for mortadella; My Spicy Italian Boyfriend; the Watertown, house Italian sausage with garlic spinach and sheep's-milk feta. Come planning to sit. A server runs the room, and Visit Bentonville's late-July visit found every table taken within minutes and a waitlist at the door.
