Every beer brewed on Puritan's one-barrel system comes light enough to order by the pitcher: an English-inspired house line, Pale 8/13 and Dark 8/13, named for their Plato values, with eight degrees landing around 3.2 percent alcohol. The Fayetteville Flyer walked through the setup when the beer went public in July 2022. Brewmaster Joe Kane has been making that bet ever since, and it runs straight against the region's hazy-IPA reflex — beer built for the third hour of a conversation, not the first sip. The room follows the beer.
